The wine
Clandestin, the grower project born in the Côte des Bar, bottle Austral from old-vine Pinot Noir on the Aube's Kimmeridgian clay. A Blanc de Noirs with no dosage and nothing to mask, it speaks in the low, vinous register that marks the southern frontier of Champagne.
Pale amber-gold, the mousse fine and insistent. The bouquet leans savoury: red apple skin, brioche crust, dried orange, and a flinty, oxidative note. On the palate it is dry, broad, and chalky, with quiet red-fruit weight and a bone-dry, persistent finish. Champagne for the table, not the toast.
Why we chose it
“Bone-dry Pinot from the Aube, vinous and unvarnished. Grower Champagne with grit.”
