Domaine Chavy-Chouet farms in Puligny-Montrachet and Meursault, where the family has tended vines since 1893. Over generations the Chavys married into two other Meursault winegrowing families, the Ropiteaus and the Chouets, names that now appear in the domaine's own. For most of the twentieth century the family sold its grapes to négociants, including Bouchard Père et Fils, rather than bottling under its own name.
That changed in 1982, when Hubert Chavy began estate bottling a portion of the family's fruit rather than selling it all under contract. His son Romaric began studying winemaking as a boy and trained alongside his godfather, the respected Meursault grower François Mikulski, before joining the family domaine in 2006. He took over full responsibility in 2014, following Hubert's death, becoming the latest generation to make wine from vines his family has worked for well over a century.
The domaine now farms close to 13 hectares spread across five communes of the Côte de Beaune: Meursault, Puligny-Montrachet, Saint-Aubin, Volnay and Pommard, with Chardonnay from Meursault and Puligny-Montrachet forming the bulk of production. Holdings include the Meursault premier crus Genevrières and Charmes, the monopole Clos des Corvées de Citeaux, and, in Puligny-Montrachet, the premier crus Les Folatières and Les Champs Gain alongside village level parcels such as Les Enseignères.
In the vineyard the domaine ploughs its soils and limits chemical intervention, favoring traditional treatments such as copper and sulfur over synthetic sprays. Grapes are picked by hand, pressed directly, and given a period of settling before the juice moves to barrel for fermentation. The wines are raised in French oak with only a modest share of new wood each vintage, and bottled after roughly a year. Romaric Chavy has spoken openly against the ultra-lean, hyper-reductive style some Meursault producers pursue, aiming instead for wines with enough texture and structure to age.
i.WINE currently carries the 2023 Puligny-Montrachet 1er Cru "Les Champs Gain," the 2023 Meursault "Clos de Corvées de Citeaux" Monopole, the 2023 Puligny-Montrachet "Les Enseignères," and the 2023 Puligny-Montrachet 1er Cru "Les Folatières" from Domaine Chavy-Chouet.
