The wine
Siblings Camille and Guillaume Boillot carry one of Burgundy's great names into a new generation, farming with care across the Côte. Saint-Romain, perched high and cool in the hills, gives Chardonnay of bright tension and value. This Sous le Château cuvée from 2023 is fresh, mineral and beautifully drawn.
Bright pale lemon. The aromatics are crisp and inviting: green apple, citrus, white blossom and a chalky, oyster-shell minerality. The palate is taut and refreshing, lemon and orchard fruit cut by vivid, racy acidity from the cool elevation. There is a subtle creaminess and a stony backbone but little weight. The finish is clean, saline and persistent, all energy and lift.
