Camille and Guillaume Boillot released their first wines from the 2022 vintage, working from a cellar in Meursault under a name that already carries weight in the Côte de Beaune. Guillaume is the son of Henri Boillot and worked alongside his father at the family domaine, with responsibility for the red wines, before setting out on his own. Camille is a Violot-Guillemard, the fifth generation of a winegrowing family in Pommard and the daughter of Christophe Violot-Guillemard. Between them the two families span Pommard, Volnay, Meursault and Puligny-Montrachet, which is to say the heart of the Côte de Beaune.
The domaine is small by design. The couple farm a few parcels of their own, in Puligny-Montrachet and at Bourgogne level, and complement them with a modest négoce operation that buys fruit from growers across Meursault, Puligny-Montrachet, Volnay, Pommard and the hill of Corton. The first vintage came to roughly twelve thousand bottles across six white cuvées and two reds, and their stated ambition is to grow slowly toward a size they can sustain rather than to chase volume. Their four children turn up at harvest and in the way the couple talk about the estate, an inheritance they hope to pass on without insisting.
Farming is sustainable with growing attention to organic practice, the grapes are picked by hand and sorted in the vineyard. In the cellar the whites set the tone. Chardonnay is whole-bunch pressed in a vertical press, then fermented and raised largely in used barrels of 350 and 500 litres, with new oak the exception rather than the rule and bâtonnage kept to a minimum. Camille has described the style they are after as a light toast and a touch of reduction, with concentration and fine length. The wines are bottled under natural cork with a wax seal.
The reds follow the same logic. Pinot Noir is fully destemmed and fermented in barrel, a method the couple use because it allows a gentler extraction while keeping precision and aromatic lift. Volnay Les Champans and the Corton grands crus are made to show the perfume and fine tannin of their sites rather than power.
What emerges is a contemporary and restrained reading of the Côte de Beaune from two people who grew up inside it: Meursault from the lieux-dits of Limozin and Les Clous and from the Blagny premier cru, Puligny-Montrachet premiers crus from Le Cailleret and Les Champs Gain, Saint-Romain from the slope beneath the old château, and grand cru Corton in both colours.
i.WINE currently carries the following wines from Camille et Guillaume Boillot: Corton Charlemagne Grand Cru 2024, Corton-Renardes Grand Cru 2023, Meursault 1er Cru "Blagny" 2022, Puligny-Montrachet 1er Cru "Le Cailleret" 2023, Puligny-Montrachet 1er Cru "Les Champs Gain" 2023, Volnay 1er Cru "Les Champans" 2023, Meursault "Limozin" 2023, Meursault "Les Clous" 2023 and Saint-Romain "Sous le Château" 2023.
